Coconut Almond Butter Nanaimo Bars

Makes 36 bars

Ingredients

Bottom Layer:
1/4 oz dark chocolate
2 tablespoons coconut oil
2 tablespoons coconut cream
1/4 cup unsweetened cocoa
2 scoops chocolate whey protein powder
1 cup unsweetened coconut
1/3 cup Xylitol
1 egg white

Middle Layer:
2 cups natural almond butter
1 1/2 cups Xylitol
1 teaspoon vanilla essence
1 tablespoon xanthan gum

Top Layer:
1 oz dark chocolate
2 tablespoons coconut oil
1/3 cup Xylitol

Directions

Bottom Layer:
Spray a 9-inch square pan with cooking spray.
Melt chocolate, coconut oil and cream together in saucepan over low heat.
Remove from heat, then add cocoa, whey protein powder, coconut and xylitol and mix well.
Mix in egg white to bind mixture. If it’s still crumbly, add a small amount of cold water.
Press evenly into pan and chill.

Middle Layer:
Cream together almond butter, Xylitol, vanilla essence and xanthan gum.
Beat until creamy and spread over chilled base.
Refrigerate until hardened.

Top Layer:
Melt chocolate, coconut oil and Xylitol in saucepan over low heat.
Pour over chilled middle layer and tilt pan back and forth to spread evenly.
Refrigerate for about 20 minutes until chocolate layer just starts to harden and score into 36 x 1 1/2 inch sections. When totally hard cut into 36 bars.
